Sublime! Intense garnet-red. Intense and persistent aroma, with cherry hints. Velvet in the mouth, with rich, long and moreish dark brambly fruit.
Hand picked and carefully placed into wooden crates, the grapes are then placed in special drying chambers for up to 120 days. As the grapes dry, losing up to 40% of their weight, they intensify flavours, soften tannins, and increase the ratio of skin contact that will follow.
In January / February the grapes are crushed and a cool fermentation begins. This is typically somewhere between 4 to 6 weeks, before some initial ageing in stainless steel. Around half of this is then aged for 12 months in oak, before final blending. Really something quite special.
