Gatito Loco Organic Rioja DOC
Fruit forward and focused on minimum intervention. This wine stands out for its red and black fruits and liquorice aromas. Fresh and round with a multitude of nuances supporting the black fruit flavours. Young, vibrant, and punchy.
Night harvested, crushed & destemmed to 10 ton fermenters. Cooled to 5 degrees for 7 days. Initial ferment is cool, allowing maximum flavour extract, with a mix of wild and introduced yeast. The temperature rises for the rest of a 15 to 20 day ferment allowing a good extraction of vital tannins and body. A further 12 days are spent ‘on the skins’.
