Viognier grapes are harvested from the cool, coastal vineyards around the lagoons of Etang de Thau. It is here that some of the most distinctive Viognier is grown and crafted to display purity of fruit, without any oak ageing. The winemaking team taste the grapes in August, to choose the right day to harvest. Post-harvest the grapes undergo a short skin-contact maceration. Then, the juice, after a delicate pressing and meticulous off-settling, ferments at low temperature.
