Intense purple- black wine has a harmonious bouquet of red and black berries, with soft and sweet tannins on the finish.

The grapes are harvested in late autumn, by which time the grapes have shrivelled to raisins and are already partially dried on the vine.

The appassimento process means the grapes are lfurther dried in baskets until December after the manual harvest and selection. At the end of December, the maceration takes place very slowly at low temperatures and the wine is kept on lees until March. The result is a crazy concentration of flavour.
